  1. Remember folks, when Sam pulls out one of these foil packet dishes, and puts it on the grill behind him, that means it just needs to be hot. It can be done in winter in the great northeast too. Just use the oven instead of the grill when it's -12°F out there. Same rules apply. 375°-400°. 10 minutes per side.

  2. While I admire the convenience of the foil packet approach, I’m curious as to how the steak and shrimp are cooked at the same temp for the same time – and essentially steamed. I feel like 20 minutes of steaming bite sized steak and bite sized shrimp at the suggested 350-375F would overcook both. Would’ve loved to see a piece of the steak cut to see how it looked inside, and I can tell the shrimp were over cooked. Not hating, I’m a huge fan of you and your show, your books, and your recipes. Just feel like this one might not execute well for those that prefer medium rare steak and shrimp that isn’t over cooked.

  3. Yo, Sam! They make these really cool and cute mini silicon tongs that are perfect for unwrapping foil packets. If the silicon ones are too much, go for the mini stainless tongs. Not quite as cute but sometimes just what the doctor ordered and for good reason. 😂 save your fingertips, use tongs..

  4. Oops! Information FUBAR!! At @ 3:30 you say "The smaller the number, the more shrimp per pound." Incorrect-o, my friend with damaged shnozz!! 🤦‍♂ It's "the smaller the number, the FEWER, *but bigger* shrimp per pound"….. On the positive side, this recipe is an absolute 'gotta do', and the 'dumb photos' of the finished products are absolutely necessary, as YOU are the Larry Flynt of 'food porn'!!
